Celery cream soup

I just love soups. Any veggie soup works great for me. But my absolute favourites are cream soups that my mum started making when my sister and I first became vegetarians. This is one of them with some tiny changes so that it meets my style. Sorry, mum!

Here is what you’ll need for it:

  • 1 celery
  • 2 small potatoes or 1 big
  • 2 carrots
  • Vegetarian boujon or mix of dried veggies *
  • Some ginger, salt, curcuma and, if you like it, curry spice

How to make it?

Very simple. Chop and boil all veggies until they are soft. Use your wand mixer or blender to blend it. If you are using a blender, you should get some really mashed potato like mass without chunks of veggies. Return it then back to the water and let it cook for a few more minutes on a low fire. When you add it back to the fire, add all the spices and bujon. Try to see if you would add more salt or other spices. **

And there you go! It can’t get easier, tastier and healthier than this!

* This is one of the spices I discovered in Serbian healthy food stores. Ever since I first tried it, I can’t imagine my life without it. If Serbia has it, I am sure that your local healthy food store also has it. It is mixture of chopped dried veggies with some spices like curcuma but with no salt. I love it!

** If you like pepper, this would be the perfect time to use it.
